On the work table we arrange a pancake, cut it in four, fill each part with the cheese mixture and roll it into a cone.

We arrange each formed cone in a heat-resistant dish, previously greased with butter. We do this with each pancake.

At the end, scrape the butter over the pancakes.

Put the dish in the oven for 15 minutes.

The pancakes are served hot with sour cream.

I'm crazy about many savory pancake recipes, but this is one of my favorites. It does not contain products of animal origin, it does not contain gluten and it is absolutely delicious.

I must admit that I immediately thought of testing this recipe immediately after Tania tempted me with her pancake recipe. I hadn't tried chickpea flour before, but after this round of pancakes, I came across a few more recipes with this wonderful ingredient that I guarantee you'll love.

But until then I leave you with the recipe for these super good pancakes.

A delicious appetizer that can be eaten in the morning, at lunch or in the evening. Hot or cold.

INGREDIENTS
PANCAKE Dough
2 eggs
300 ml milk
250 g flour
1 pinch of salt
FILLING
50 g butter at room temperature
200 g cottage cheese or cheese (not watery)
100 g sour cream
50 g sugar
1 sachet of vanilla sugar (optional)
peel from 1 large lemon
APRICOT FOAM
200 g fat cream (I only put 100g)
100 g yogurt consistent
200 g apricot puree
40 ml of apricot liqueur
1 teaspoon powdered sugar
TOPPING
1 handful of almonds

PREPARATION
Take the butter out of the fridge to have time to reach room temperature.
APRICOT FOAM
1. Put the yogurt, sour cream, sugar and finely grated lemon peel in the blender.
2. Wash, clean the seeds and break the apricots by putting them in a blender. Mix a fine puree.
3. At the end you put the liqueur and give a few more impulses.
4. Transfer to a saucepan with a lid (any covered bowl) and refrigerate for 1-2 hours. If it is hard to serve quickly to guests, put it in the freezer for 20 minutes and then in the refrigerator. It doesn't have to freeze.

FILLING
Mix all the ingredients for the filling with a fork.
TOPPING
Fry the almonds in a thick, oil-free Teflon pan. After they have cooled, you put them in a thick zipped bag or knotted at the mouth and crush them with the twister.
SUGGESTION TO SERVE
Either on a foam bed, or place it next to it, as I did, place the pancake and garnish it with almonds. I sectioned diagonally, I stamped one with peanuts (because I had this instead of almonds) and I sprinkled the other with grated lemon peel.

  5. Grease the pancake pan with a little oil, using a silicone pastry brush. We used a 20cm diameter tray. We put a composition polish for each pancake. Turn the tray to distribute the dough evenly and bake the pancakes until they are browned on each side.
  6. We take them out on a plate lined with kitchen paper, to absorb the excess oil.

Tuna mousse with cream cheese

Tuna mousse with cream cheese, corn, sun-dried tomatoes and green onions is one of my favorite recipes and I repeat it whenever I have the opportunity. One of the most recent occasions was my birthday and I couldn't help but prepare it, to delight my friends with this dish as well.

For this mousse you practically only need 2 basic ingredients: tuna and cream cheese, because the other ingredients can be omitted or even replaced with others. It is up to you to choose what you want to put (eg capers, olives, chives). As simple as this recipe is to make, it is just as delicious and can be made in a maximum of 15-20 minutes.

I named it "Tuna Mousse with Cream Cheese" because it has a very fine texture. It's actually a fine tuna paste / cream. It can replace any classic salad that is made for occasions / festive meals, you can grease some bruschettas or sandwiches with this composition and I assure you that you will turn your back on any guest.

Here's what you need to make this delicious mousse:

INGREDIENTS
8 small cans of tuna (about 300 gr.)
200 gr. light cream cheese
60 gr. dried tomatoes, plain in the bag, not in oil (I took them from Lidl)
100 gr. boiled corn on cobs
1-2 sprigs of green onions
2-3 tablespoons lemon juice
salt and pepper (to taste)

PREPARATION
Squeeze the oil well from the tuna cans, then put the tuna in a large bowl. If you use tuna in your own juice, then squeeze all the liquid from the can. Put the cream cheese and lemon juice in the same bowl over the tuna, then with the help of a vertical / hand blender, blend the ingredients until everything becomes a fine paste. Insist with the blender until you get the desired consistency.

In the same bowl add the boiled corn, green onions and finely chopped sun-dried tomatoes, then mix everything well with a spoon. At the end, season with salt and pepper to taste.

Serve the tuna mousse with cream cheese on small slices of bread, on crakers or put it in mini tarts.

You can also put 2-3 tablespoons of this composition over some glues, roll them, leave the glues cold for about 1 hour, then cut them into smaller pieces. That's what I did on my birthday, see the picture below.

In addition, to give you an idea, the stick filled with this mousse can be taken as a package at work, school / college for lunch.

Attention: the mousse hardens a little after it is left cold and is not as fine as when you finished it. This is due to the cream cheese in the composition, which becomes firmer when you leave it in the fridge.

If you do not eat all the mousse that day, cover the bowl with foil or put it in a saucepan and cover with a lid. It lasts a few days in the fridge (3-4 days) and is just as fresh and good.
