Cut the zucchini into cubes, chop the onion and cut the garlic into slices. Tomatoes are cut into large pieces, the herbs are finely chopped, and the fish is cut into pieces of the right size.
Heat 2 tablespoons of olive oil in a pan and add onions. Cook over low heat for a few minutes then add the garlic and zucchini. Cook for 5 minutes. Add the tomatoes and herbs, cook for 3 minutes, then add the beans. Bring to the boil, reduce the heat to low and add the fish on top. Do not mix. Cover with a lid and leave for 5-7 minutes depending on the size and thickness of the fish pieces. Sprinkle with salt, pepper and grated lemon peel.
Serve with bread and lemon slices.
