Pork with baked vegetables, olives and bellows cheese


The pork is washed and portioned, as desired, salted, then placed in a tray in which I put a thin layer of oil, but also two glasses of water. Add two cloves of garlic and a small sprig of rosemary. Bake on medium heat.

Meanwhile, peel and wash the potatoes, cut into rounds and mix in a bowl with oil, salt and spices. I put a teaspoon of a spice mix that I made myself. Place in a tray prepared with baking sheet, then add two cloves of chopped garlic, and a little rosemary, from place to place. Grate the cheese on top and put the tray in the preheated oven for about half an hour.

Because I had 2 trays in the oven, I reduced the fire, so as not to burn the potatoes that were below, that's why it takes about 30 minutes for the potatoes, and the meat for about 45-50 minutes, so they should be checked from time to time.

Serving tip: rosemary and garlic give a special flavor to potatoes, but should not be used in large quantities, because they can give it a bitterness. At the end, you can serve them with a few slices of bellows cheese, which will give it that "je ne sais quoi".
