Sweet zucchini croquettes

We clean the zucchini and put it on the grater with small holes. We leave it in a strainer for 10 minutes to drain well.

Then add flour, beaten eggs, sugar (more or less - to taste), vanilla sugar, baking powder quenched with lemon juice and lemon peel.

Heat the oil and make croquettes that we put in the flour and fry them on all sides.

I took the composition with a spoon and put it directly in the frying pan.

Remove the croquettes on an absorbent napkin and they can be tasted.

Whoever wants can sprinkle powdered sugar on top.
