Beetroot meatballs with feta and corn


I made this recipe because I know that beetroot is very good for health but I didn't like its too strong earth root taste so simple and I tried to find a way to eat it with the changed taste and that's how I liked it.

  • 1/2 beetroot,

  • 1/2 red onion,
  • 1 clove of garlic,
  • sweet boiled corn kernels,
  • a piece of Feta cheese.

RECIPE PREPARATION Beetroot meatballs with Feta and corn:

Boil the peeled beets and cut them into cubes. Separately, heat the finely chopped onion together with the sliced ​​garlic and then add the diced boiled beets and leave it on the fire, stirring a little. Take this mixture and pass it in the blender. Then add the flour, a pinch of salt and a beaten egg. Mix well and with your hands moistened with water form meatballs. Heat the oven and prepare a large tray with baking paper on it. Roll the formed meatballs in breadcrumbs and then place them nicely on the tray on baking paper. Leave them in the oven until golden brown. on one side and turn them on the other. We take them out when they are ready and serve them either as simple or cut in half and filled with feta cheese and a grain of corn.

The other half can be baked in the oven and made into a salad with vinegar sauce and corn kernels and parsley on top.


Corn meatballs

An appetizer, but also a very popular snack are these corn meatballs, which are easy to prepare and with ingredients at hand. You can prepare them with fresh, frozen or canned corn.

In the recipe for corn meatballs, hot peppers are optional, if you do not like hot food you can omit it. Or you can add a sauce to your liking.


If you have fresh red beets, they are cleaned of leaves, washed and cleaned with a sponge. Then boil with a little salt for about 15-20 minutes with the peel, until the fork enters it easily. Boil the beets in water when it boils. After boiling, leave to cool. Another option would be to bake it in the oven for 20 minutes, it comes out much tastier.
If you don't want to boil beets anymore, in supermarkets you can find red beets already steamed, which can be the compromise solution.
Parsley is cleaned, washed and finely chopped.
Boiled beets are peeled and put through a large grater or chopped. Add balsamic vinegar, 2-3 tablespoons of olive oil, a pinch of salt and a pinch of pepper over the grated beets. Then squeeze the lemon juice over the beets and add half of the chopped parsley.
Stir gently, making sure the beets do not crumble, then place it on a plate. Sprinkle the remaining chopped parsley on top, then take the feta cheese and break it over the beets. If you want, you can cut it with a knife.
At the end, sprinkle everything with 1-2 tablespoons of olive oil.

Bake the meatballs in a hot air fryer or oven

Since I didn't want to fry Greek meatballs in an oil bath, I decided to try it the new hot air fryer from HEINNER. Is called In the Airfryer (HAF-1250BK) and you can read more about it here. The hot air fryer has a modern, compact design and perfect finishes. Its use is intuitive and very simple. At the top it has 2 control buttons: the one on the left adjusts the baking temperature (max. 200 C) and the one on the right sets the time (max. 30 minutes). Between them is an LED that illuminates during the operation of the fryer.

The basket of the hot air fryer has a capacity of 2.5 L, is removable, non-stick and has a cold handle with heat protection. Can be washed in the dishwasher.

I prepared my soldierly arranged Greek meatballs.

I connected the fryer to the power, I set the temperature to 200 C and the time to 20 minutes. The first 5 minutes were pre-heated. The fryer is very quiet, you can barely hear the air circulating in it.

I arranged the meatballs in the fryer basket and greased them on the surface with very little oil (with a brush). In the first round I put only 11 pieces but 12 came in without any problems, especially since they decrease a bit when baked or fried.

I closed the fryer drawer and baked these Greek meatballs for 15 minutes at 200 C. What nice flavors I have in the kitchen! HEINNER Nelle hot air fryer it is equipped with an active filter so the steam discharged in the back area has much attenuated flavors. It doesn't even compare to the intense smell of frying meatballs in a frying pan with oil or baking them in the oven! In addition, you do not heat your kitchen, especially in summer.

The principle of operation of this fryer is based on the circulation of hot air. Thus the dishes are cooked evenly and even brown! I don't get any whitish stews. Look how beautifully my meatballs have browned! I didn't even have to return them. At the end of the set time, the fryer warned me loudly and switched off. So there is no risk of burning the preparations.
