The washed beans are boiled and change two waters. To boil more easily, the beans can be soaked in water for a few hours before cooking or overnight.
In the third water, put the whole onion and carrot, thyme and leave it on the fire until the beans and vegetables are well cooked. Drain the water and leave the beans to cool, then mix well. I keep the carrot and onion and mix them together with the beans and the 8 tablespoons of oil.
We grind the garlic cloves with a little salt and mix them in the bean cream. Season with salt and pepper.
In a frying pan, fry the chopped onion in a little oil, and when it gets a nice golden color, add a small cup of water, cover the pan with a lid and let it simmer until the water drops. Put the broth, mix well, leave on the fire for approx. 2-3 min. and that's it. Pour the broth sauce over the bean cream and serve with gusto.
