I do it when I'm on a fasting mayonnaise diet
- 10 medium potatoes
- 150 grams of black olives
- 2 onions
- 2 eggs

RECIPE PREPARATION Simple oriental salad:
The potatoes are washed and boiled in their skins. After they have boiled and cooled, peel them and cut them into cubes. Remove the seeds from the olives, cut them into juliennes and add them over the potatoes. Cut the onion into small pieces and add it as well. At the end we add mayonnaise and hard boiled eggs. Mix all with salt or vegeta and vinegar.
When we put the potatoes to boil, we add a little salt so that our skin does not crack.

Wash the potatoes well and boil them in cold water until they are well covered. When they are cooked, we drain them, pass them through a stream of cold water, clean them and cut them into cubes.
Peel a squash, grate it and cut it into cubes.
Peel the onion and chop it finely.
Drain the cucumbers from the brine and also cut them into cubes.
Drain the pickled olives in which they stood and leave them whole.
In a large bowl, mix all these ingredients.
Season with salt, pepper and lemon juice to taste.
We assemble the oriental fasting salad on the plate with the help of an assembly ring, for a more pleasant appearance.
Let it cool for at least 30 minutes before serving.
You can replace green olives with black ones, or kalamata, for a contrast of color and taste.

Oriental salad is one of the simplest and probably the most economical salad of Romanians. From just a few simple ingredients and available to anyone, we can have a snack and a healthy and tasty dinner, where we also say that it can be accompanied by another dish, generally made of meat.
Loved equally by the little ones, by the big horses and especially by those who fast or are vegetarians.
I remember that when I was a child there was no month when my mother would not prepare it, and I think it was part of the menu of all the holidays in my family. I often improved it, but it was good enough anyway.

How do we make oriental salad?
- 1 kg of medium salad potatoes
- 200 g pickles
- 150 g bell pepper
- 150 g pitted black olives
- 150 g red onion
- 100 ml of olive oil
- 1/2 bunch of parsley
- Salt and pepper to taste
Method of preparation:
Wash the potatoes well from any traces of earth and boil them with the peel and a pinch of salt, in a large pot, covered with a layer of water with two fingers.
After they have boiled, drain the water from them and let them cool completely. We peel them and cut their slices 2-3 mm thick.
We clean the onion, cut it into rounds and cut the pepper into juliennes.
We coarsely chop the parsley.
We cut the cucumbers into rounds.
Put all the ingredients in a bowl, taste with salt and pepper, mix lightly with a spatula and look that they are ready to serve.
Simple, fast and economical, but also with taste and childhood memories.

Boil 5 hard-boiled eggs for about 10 minutes, then let them cool and cut them into slices.
In a bowl, mix well the lemon juice, oil, mustard, salt, pepper and honey.
After the potatoes are cooked, take them out of the water and let them cool a bit.
Cut the potatoes into suitable cubes.
In a large bowl, mix all the ingredients with the vinaigrette.
Stir carefully so as not to crush the potatoes.
Decorate with quarters of boiled eggs and add extra olive oil if you feel the need. It can be served as a main course or as a side dish.
